THE ISLAND
Cyprus sits where three continents nearly touch. The light here is different. Sharper, longer, present from March through November in a way that changes the colour of everything it falls on. The sea is never far. Even in the hills, the air carries salt.
People have grown olives on this island for six thousand years. The trees outlast the people who plant them, the empires that claim the land, the languages spoken beneath them. Some of the trees in our grove are nine hundred years old. They were already ancient when the Venetians built the walls of Nicosia. They are still producing fruit.
One oil, from one place, grown the way it has always been grown on our island.
THE GROVE
Our grove sits a few hundred metres from the sea, close enough that the trees grow slowly in the salt air. This is a single estate. Every bottle of TOPOS comes from these trees and no others.
The olives are picked by hand each October, still green, still hard. The oil is cold extracted within hours of harvest. Nothing is added. What comes out is sharp, peppery, and alive, an oil rich in phenols that speaks of the effort the fruit made to survive a dry Cypriot summer.
THE OIL
This is not blended. Not softened for a wider market. It is not an oil that tries to please everyone. It is direct, honest, and full of the place it comes from.

Green fruit, fresh cut grass, and a hint of wild herbs on the nose. Peppery and direct on the palate with a clean bitterness that builds and a long, warm finish in the throat.
